Gluten Free Gingerbread Cookies

INGREDIENTS:
2 1/2 Cups Gluten Free Flour
1  1/4 Tsp Xanthan gum
1/2 Cup Margarine, soft
1/2 Cup Sugar
1 Tsp Baking powder
1 Tsp Ginger, ground
1/2 Tsp Cinnamon, ground
1/4 Tsp Cloves, ground
1/2 Baking soda
1/2 Molasses
1 Egg
1 Tbsp Vinegar

DIRECTIONS:
In small bowl, combine flours and Xanthum gum.  Mix well and set aside.

In large bowl, beat margarine until creamy.  Add sugar, baking powder, ginger, cinnamon, cloves and baking soda.  Beat well.  Add molasses, egg and vinegar.  Beat well.  Slowly add flour mixture to wet ingredients (half a cup at a time).  Once mixture becomes too thick to continue with electric mixer, continue mixing the remaining flour with a spoon.

Form dough into ball.  Cover with saran wrap and chill for 3 hours.  Roll dough to 1/4” thickness on a lightly floured surface.  Use desired cookie cutters and place on ungreased cookie sheet.

Bake at 375C for 7-9 minutes (or until edges are slightly brown).  Cool on wire rack before icing and decorating.  Makes approx 3 dozen.
