Gluten Free Lazy Daisy Cake

INGREDIENTS:
2 Eggs
1 Cup sugar
1 Cup brown rice flour
1/2 Tsp xanthan gum
1 Tsp baking powder
1 Tsp vanilla
1/2 Tsp salt
1/2 Cup milk
1 Tbsp butter

DIRECTIONS:
Beat eggs slowly until thick, add sugar and beat.  Add flour, xanthum gum, baking powder, vanilla, and salt.

Boil milk and butter.  Add to egg mixture.  Pour into greased 8×12 pan.  Bake at 375F for 30 minutes.

ICING:
3 Tbsp butter
2 Tbsp milk
5 Tbsp brown sugar
1/2 Cup coconut

Add everything in order given.  Stir well and bring to boil.  Boil for 1-2 minutes.  Spread on baked cake.  Put back in oven to brown.
