Gluten Free Corn Tortillas

2 Cups (loosely measured) Maseca flour (Instant Corn Masa)
1/4 Tsp salt
1  1/2 Cups water

Mix together flour, salt and water thoroughly for 2 minutes to form soft dough.  If dough is dry, add water (one tablespoon at a time).

Divide dough into 16 equal balls.  Cover dough with damp cloth or saran wrap to keep dough moist.  Line a tortilla press with two sheets of thick plastic wrap.  Place each ball in center of press and press down until tortilla is 5-6 inches in diameter.  Carefully peel off press.

Place tortilla on ungreased pan/griddle on medium-high heat.  Cook tortillas one at at time for 50-60 seconds each side.  Remove from pan and cover with cloth napkin to keep soft and warm.

Serve with chicken or beef.  Add your choice of toppings: cheese, lettuce, tomatoes, salsa, guacamole, sour cream.
